Tasty Bites: Spinach Blueberry Salad with Lemon Poppy Seed Dressing

Nothing says “Spring” like a fresh salad. I love the flavors in this simple dish. The savory red onion and spinach, the salty cheese, and just the perfect sweetness of the fruit and honey make the perfect combination. Fruits and vegetables together fills you full of healthy antioxidants and phytochemicals – what I like to call “God’s pharmacy.”

Spinach Blueberry Salad with Lemon Poppy Seed Dressing

4 cups baby spinach leaves, washed and spun dry

½ red onion, sliced thin

1 ½ cups fresh blueberries

½ cup chopped walnuts or almonds

1/3 cup crumbled feta cheese

Lemon Poppy Seed Dressing

Toss spinach, onion, blueberries, and nuts together in a large bowl. Top with desired amount of dressing, then sprinkle with cheese. Serve and eat!

Lemon Poppy Seed Dressing

(Makes 1 cup)

½ cup frozen lemonade concentrate, undiluted

2 Tablespoons canola oil

1 ½ teaspoons poppy seeds

1/3 cup honey

Whisk all ingredients together and refrigerate before serving.
